peat.jpg (15380 byte) Peat is a soil material consisting of partially decomposed organic matter - often acquatic or semi-acquatic plants - and is found in swamps and bogs. Peat is known to be an early stage in the formation of coal. When peat is burnt, it burns very slowly and at a lower temperature than wood or coal. This has influenced Irish cooking in which most dishes, like the traditional Irish stew, are cooked for a long time over a low heat.
